Everyone in our family is a carb-a-holic. We love us some pasta! But the best pasta, far and away, is the kind you make yourself.
Miss Chief calls them pasta pockets but to most everyone else they are ravoli. They’re simple to make but a tad time consuming. We have them about once each month. The cheese filling can be changed to anything you’d like – meats, different cheeses, veggies, etc. The children enjoy smooshing the filling into each pocket and eat heartily.
If there is a veggie you’d like the kids to eat but they dislike it, pasta pockets are a great place to hide them. Magic blender to the rescue! (or chop finely)
Different herbs and small bits of vegetables can give the pasta color, if you add them directly to the dough. Just be certain that the additions are small enough to allow the pasta roller to do its job.
I used five eggs this time and ended up with three plates full of drying pasta like the one you see in the picture. There were a few left but Papa took them to work for eating during his lunch break. The children were more enthusiastic than normal or we might have enough for our own lunch.
