There’s an interesting discussion going on in chicken circles about how to store your hen’s eggs. The questions are:
- To wash or not to wash
- To refrigerate or not to chill
Washing your eggs can remove some of the protective barrier on the eggs’ shell. Without this barrier, air may pass through more easily leading to spoilage. Not washing your eggs means that some of them might have a little poo on top.
Refrigeration does keep eggs fresh longer but is quite colder than the suggested 50°F. Displaying them on the counter top is simply beautiful.
